Spiced Sweet Potato Wedges

These wedges are a great alternative to traditional French fries. Delicious yet healthy! For a fun presentation you can serve them like some Napa restaurants do in cones that you make from parchment or brown kraft paper.

Ingredients:

  • 3 large sweet potatoes, about 2 pounds, scrubbed but unpeeled
  • 1 tablespoon plus 1 teaspoon olive oil
  • 1 tablespoon plus 1 teaspoon Poultry Herb Rub
  • Salt (preferably kosher or sea salt)

Preheat oven to 400°F. Line a rimmed baking sheet with foil. Cut the potatoes in half lengthwise and cut each half into 1-inch-thick wedges. In a large bowl, combine the potatoes, oil, Poultry Herb Rub, and salt to taste. Toss to coat evenly.

Arrange the potatoes on a baking sheet in a single layer. Bake until the wedges are golden on the bottom, about 15 minutes. Using a spatula, turn the potatoes and bake until golden all over, about 15 minutes more. Serve warm with Sour Cream Sauce (page 70) for dipping.
