Stuffed Zucchini
This is one vegetable dish that I make all the time. It looks like it would be a lot of work but it literally takes only 5 minutes to prepare - zucchini and tomatoes are such a natural pairing!
Ingredients:
- 4 medium zucchini
- 1/2 cup Roasted Tomato with Balsamic Savory Condiment
- 1/3 cup grated Parmesan or Asiago Cheese
Preheat the oven to 400 deg F. Scoop out the center of each zucchini half with a small spoon (1/8 teaspoon works well). Fill the cavities with the Roasted Tomato with Balsamic Savory Condiment, top with cheese and set into an oiled baking dish. Bake for 20 minutes. Remove and serve immediately.
